The plots are located in southern Saumur. Formerly called “the white coast”, this area was covered with white Chenin vines. A rare and particular soil on superb clay-limestone slopes, exposed full south.
The vines, over 40 years old, have great potential for maturation and concentration. The bunches are harvested very ripe and all gilded in the last days of harvest. Harvest grapes on aromatic profiles of the ripe fruit type.
Traditional vinification with temperature control (17 to 19 ° C) to preserve the aromatic potential. Breeding on lees for 7 to 8 months.
