From Chenin Blanc (100%), the vineyard is located on Jurassic limestone hillsides. Plots are selected as the harvest approaches in August and September for their ability to offer grapes rich in aromas. The harvest is done in early October, when advanced maturities are reached.
Delicate pneumatic pressing and careful trimming. Vinification followed with temperature control (17 to 19°C) to preserve the aromatic potential of white Chenin. The final assembly is refined and signed by our cellar masters, expressing the expression of their personalities, sensibilities and creativities. Finally, a breeding work on lees for 6 to 7 months, brings boldness and complexity.
